Ingredients for 3 servings:

  • 300 g pasta (e.g. penne)
  • salt water
  • 3 zucchinis
  • 250 g cocktail tomatoes
  • 4 cloves garlic
  • 4 tbsp tomato paste
  • 250 g mascarpone
  • 1 lime(s)
  • salt and pepper
  • chili

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta in salted water according to the package instructions. At the same time, chop the zucchini and tomatoes and briefly fry them in a pan with olive oil (the vegetables should still be crunchy). Season everything and add the tomato paste and crushed garlic. Stir in the mascarpone and drizzle with the lime juice. Add the pasta and mix everything together.
