Mascarpone peach cream

Ingredients for 6 servings:

  • 1 can/n peach(s)
  • 125 ml peach liqueur
  • 1 cup of mascarpone (large cup)
  • 1 cup whipped cream
  • 150 ml yogurt
  • n. B. sugar
  • possibly mint leaves

Instructions

Working time approx. 40 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 40 minutes

Quarter or eighth the peach halves, reserving two chopped halves for decoration. Marinate the sliced ​​peaches with half of the liqueur for several hours (or overnight), then transfer to a bowl (or serving dish). Whip the mascarpone with the yogurt and the remaining liqueur in a mixer, sweeten to taste. Whip the cream until stiff peaks form and fold into the mascarpone mixture. Spread the cream over the marinated peaches and smooth the surface. Decorate with the remaining peaches and fresh mint leaves, if desired. Refrigerate for about 1 hour to set.
