Zucchini flowers in wine batter

Ingredients for 4 servings:

  • 12 zucchini blossoms
  • 3 small eggs
  • 125 ml white wine
  • 125 g flour
  • 2 tbsp rum
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • Oil for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 57 minutes

Mix the first 7 ingredients (except the oil) into a thick batter. Let it rest for about 30 minutes. Break off the pistils from the zucchini blossoms and discard. Dip the blossoms, one at a time, into the batter and fry them in the frying oil for about 2-3 minutes. Serve warm as an appetizer. Drizzle with balsamic vinegar, if desired.
