Mashed potato casserole with apples

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 3 large onions
  • 2 large red apples
  • 100 g Gouda or mozzarella, grated
  • 300 ml water
  • 1 tsp, heaped vegetable stock powder
  • pepper
  • some oil for frying
  • 750 g potatoes
  • 150 ml milk
  • some butter
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Peel the potatoes, roughly dice them, and boil in salted water. Meanwhile, peel and dice the onions. Wash the apples thoroughly, quarter them, core them, and cut them into wedges. Either form the minced meat into balls and fry in a little oil, or fry until crumbly. Then remove the minced meat from the pan and set aside. Sauté the onions in the pan until translucent. Add the apples and braise them. Pour in the water and bring to a boil. Add the stock powder. Allow the liquid to reduce slightly and season the apples with pepper. Drain the potatoes and return them to the pot. Add salt, pepper, nutmeg, a little butter, and the warmed milk, and mash the potatoes. Alternatively, a hand mixer with a whisk attachment works well. Transfer the mashed potatoes to a baking dish, spread the minced meat over the meat, and top with the apple and onion mixture. Sprinkle the casserole with grated cheese and bake at 175°C for about 25 minutes. The casserole has approximately 608 kcal per serving.
