Mashed potatoes with fresh wild garlic

Ingredients for 3 servings:

  • 500 g potatoes
  • 50 g wild garlic, fresh
  • 200 ml vegetable broth (preferably homemade)
  • 5 tbsp extra virgin organic olive oil
  • n. B. Salt
  • chili flakes

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Spring at its tastiest

Boil the potatoes with their skins on in lightly salted water until soft. Peel and set aside. Wash the wild garlic and cut it crosswise into strips. Mash the potatoes in the hot broth with a fork until they combine with the broth. Add more broth if necessary. Then add the wild garlic and stir to combine. Season with olive oil, chili flakes, and salt. Delicious with fresh asparagus.
