Mashed potatoes with pak choi à la Didi

Ingredients for 1 servings:

  • 200 g potatoes
  • 100 g pak choi
  • 1 m.-sized onion(s)
  • 1 m.-large shallot(s)
  • 30 ml milk
  • 10 g butter
  • 1 dash of olive oil
  • Sea salt and white pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

First, wash, peel, and cut the potatoes into small pieces. Then cook them in boiling salted water until tender. In the meantime, wash the bok choy, remove the stalk, and finely chop the rest, including the leaves. Separate the leaves and stems. Peel the onion, cut into small pieces, and fry them well in a pan with hot oil; set the fried onion aside. Peel and finely chop the shallot. Heat the milk in a saucepan. Add the butter and the finely chopped shallot to the milk and bring to a boil briefly. Drain the potatoes and mash them in a saucepan. Add the milk mixture to the potato mixture. Heat olive oil in a pan and add the finely chopped bok choy pieces and fry them well, first the stems (they take longer) and then the leaves. Season with salt and a little pepper. Stir the fried onions and the fried bok choy pieces into the mashed potatoes and season again with salt and pepper.
