Ingredients for 1 servings:

  • 200 g butter, room temperature
  • 3 tbsp tea (matcha)
  • 1 vanilla pod(s), pulp
  • 90 g sugar
  • 250 g flour
  • 150 g hazelnuts or almonds, ground
  • 200 g sugar
  • 1 pack orange peel, grated

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 40 minutes

Christmas cookies with healthy matcha tea

Cream the butter with a hand mixer until creamy. Add the matcha, vanilla bean pulp, sugar, flour, and ground nuts or almonds and mix well. Wrap the dough in cling film and let it rest in the refrigerator, ideally overnight. Remove the dough from the refrigerator half an hour before use and knead briefly after this time. Preheat the oven to 170°C (top/bottom heat). Line a baking tray with baking paper and set aside. Mix the orange zest and sugar. Shape one half of the dough into a roll about 4 cm thick and cut 1 cm thick slices from it. Shape the slices into croissants and place them on the baking tray. Bake the croissants for about 10 minutes until golden brown, remove from the oven, let cool for 3 minutes, and then carefully roll them in the orange sugar. Store the croissants in an airtight container.
