Mate syrup for matenade

Ingredients for 20 servings:

  • 400 ml water, boiling
  • 2 tbsp tea (yerba mate – mate tea)
  • 1 tbsp, leveled guarana powder
  • 2 tbsp lemon juice concentrate
  • 2 tbsp syrup (fruit syrup) of your choice
  • 400 g sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Syrup made from a yerba mate infusion with guarana

First, pour boiling water over the mate tea, let it steep for 5-8 minutes, and then strain it into a saucepan. Add the remaining ingredients and stir. You can evaporate the mixture slightly on the stovetop, but don’t let it boil. Everything should be well dissolved. The guarana powder is not very soluble, so you might want to filter it first, before adding the sugar and the remaining ingredients. You shouldn’t boil it. If you bottle the mixture like I do, you should rinse the bottles with boiling water beforehand to prevent germs. Now let the syrup cool thoroughly and place it in the refrigerator, where it will keep for quite some time. To make the matenade or mate lemonade, pour a small amount of syrup into a glass and fill it with cold mineral water. I use sparkling tap water. Of course, this also works without guarana and fruit syrup. It will just taste different and not as invigorating.
