Matjes and tomato tartar on toasted bread

Ingredients for 4 servings:

  • 4 herring fillets (double fillets)
  • 2 spring onions
  • 5 tomatoes, dried
  • ½ tbsp capers, chopped
  • 1 tbsp rapeseed oil
  • 4 tbsp parsley, chopped
  • Salt
  • Pepper, from the mill
  • Baguette(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and finely chop the spring onions and tomatoes. Mix with capers and parsley. Dice the herring and fold in. Season with salt and pepper. Serve on toasted baguette slices. Serve with a glass of red port.
