Ingredients for 2 servings:
- 1 apple (sour)
- 100 ml white wine (dry)
- 4 herring fillets
- 4 tbsp cranberry compote
- 1 cup of crème fraîche (150g)
- Pepper, freshly ground white
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the apple, core it, and cut it into 4 slices. Sauté in wine until almost soft, then let it cool in the liquid. Arrange the drained apple slices on a platter. Wash the herring fillets, pat dry, roll them up, and place each upright on an apple slice. Fill with cranberry compote. Mix the crème façade with a little wine-apple juice, season with pepper, and pour over the fillets before serving.
