Matjes fillet with apples and boiled potatoes

Ingredients for 4 servings:

  • 4 fish(s) (fatty matjes, filleted, add a little water if necessary)
  • 8 m.-sized jacket potatoes
  • 150 g smoked bacon
  • 2 apples, preferably with a strong taste Boskop or similar,
  • 1 large onion(s)

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Distribute the 4 filleted herrings on 4 plates. Slice the onion into rings and arrange them on top of the fillet along with the apple slices. Peel the boiled potatoes while still hot and add them to the plates. Shortly before serving, cut the smoked bacon into small pieces, fry them, and pour them over the fillets. Serve with some leaf salad and a good beer. Arrange the herrings with the onion rings and apple slices at least 2 hours before serving to allow them to marinate.
