Matjes fillet with boiled potatoes and green beans with bacon

Ingredients for 4 servings:

  • 8 fish fillets (matjes fillets)
  • 2 onions, rings, finely chopped
  • 1 kg jacket potatoes
  • 4 tbsp olive oil
  • 250 g bacon, streaky, diced
  • 4 tbsp olive oil
  • 500 g beans, green
  • 100 g herb butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Arrange the herring fillets on a platter; sprinkle with the onion rings. Boil the potatoes in salted water, let them cool slightly, then quarter them and fry them slowly in hot oil in a pan for 15 minutes until crispy. Fry the streaky bacon in oil until golden brown. Cook the beans and toss them in melted herb butter. Transfer to a platter and top with the bacon cubes. Serve everything together.
