Ingredients for 2 servings:

  • 1 large cucumber(s), thinly sliced
  • ½ bunch dill, chopped
  • 1 tsp oil
  • n. B. Salt
  • Sugar
  • e.g. lemon juice
  • 6 m.-sized potatoes, floury
  • 2 spring onions, finely chopped
  • 3 tbsp olive oil
  • possibly bacon, diced

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cucumber salad with mashed potatoes

Make a cucumber salad with the cucumber, dill, salt, pepper, lemon juice, and oil. Season to taste and let it marinate. Boil the potatoes until boiled, drain, but reserve some of the cooking water. Briefly fry the spring onions in a little oil. Make a mashed potato with the potatoes, spring onions, olive oil, a little of the cooking water if desired, and some rendered bacon, if desired. Season with salt. Arrange the mashed potatoes in a ring and place the cucumber salad in the center. A great dish on hot days.
