Matjes fillets with fried potatoes

Ingredients for 4 servings:

  • 600 g matjes fillet(s)
  • 3 onions
  • 400 g apples
  • 150 g gherkins
  • 200 ml cream
  • 200 g sour cream
  • 3 tbsp lemon juice
  • 1.2 kg potato(s), waxy
  • Salt
  • Pepper, crushed
  • Sugar
  • oil

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 13 hours

The matjes fillets must marinate for 12 hours

Remove any bones from the herring fillets, wash, pat dry, and cut into 2 cm pieces. Peel and slice the onions, then blanch in boiling salted water for about 3 minutes. Peel, quarter, core, and slice the apples. Slice the cucumbers. Mix the heavy cream and sour cream with the lemon juice, season with pepper, salt, and sugar. Add the apples, cucumbers, and herring fillets and mix well. Let stand in the refrigerator for 12 hours. Cook the potatoes in plenty of salted water until tender, peel, and cut into wide slices. Heat oil in a pan and fry the potato slices on each side until golden brown. Season with salt. Serve the crispy fried potatoes with the herring fillets.
