Ingredients for 4 servings:
- 75 g honey, liquid
- 50 ml apple cider vinegar
- Salt and pepper, white
- 100 ml rapeseed oil, cold squeezed
- 1 onion(s), red
- 1 red-skinned apple, approx. 200 g (e.g. Royal Gala)
- ½ bunch of dill
- 8 matjes fillet(s) (double fillets approx. 130 g each)

Mix honey with apple cider vinegar, salt, and pepper. Whisk in the oil. Peel the onion and slice very thinly. Wash the apple, pat dry, and quarter it. Remove the core. Cut the apple quarters into thin strips. Pick the dill tips. Arrange the herring fillets on a platter and drizzle with the honey vinaigrette. Sprinkle with onion rings, apple slices, and dill. Let the herring fillets marinate for 15 minutes, then serve with boiled potatoes. Tip: Marinate the herring fillets the day before and refrigerate overnight; this will make them even more flavorful. Remove the herring fillets from the refrigerator about 30 minutes before serving.
