Ingredients for 4 servings:

  • 6 fish fillets (matjes fillet)
  • 4 gherkins
  • 4 tomatoes
  • 2 spring onions
  • 1 bunch of dill
  • salt and pepper
  • Vinegar
  • oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Dice the matjes fillets. Dice the cucumbers. Quarter the tomatoes, remove any excess fat, and dice them as well. Clean the spring onions and slice them into thin rings. Finely chop the dill. Mix everything in a bowl. Mix pepper, salt (use it sparingly; the matjes may already be salty enough), mild wine vinegar, and sunflower oil to make a marinade. Mix with the salad ingredients. Let it marinate for about an hour. Served with fresh boiled potatoes, this is a refreshing dish, especially in summer.
