Matjes salad with apples

Ingredients for 2 servings:

  • 1 small salad (lettuce)
  • 1 small onion(s), red
  • 1 apple, red, juicy, sour
  • 4 sprigs of dill
  • 1 gherkin(s)
  • 50 g sour cream
  • 150 g yogurt
  • 2 tsp lemon juice
  • 2 herring fillets (100 g each)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Low carb, glycemic index

Wash and trim the lettuce, shake dry, and tear into pieces. Peel and chop the onion. Wash and halve the apple. Remove the stem and core and cut the flesh into small pieces. Wash, shake dry, and chop the dill. Finely dice the gherkin. Whisk the sour cream, yogurt, and lemon juice until smooth. Season the dressing with salt and pepper. Cut the herring fillets into pieces and arrange them in portions on top of the lettuce along with the onions, apples, dill, and the dressing.
