Matjes salad with egg and gherkins

Ingredients for 3 servings:

  • 1 pack of matjes fillet(s), or 4 fresh
  • 1 m.-sized onion(s)
  • 2 m.-sized eggs
  • 3 gherkins
  • 1 dash of sunflower oil
  • some cucumber juice

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Recipe from my aunt from Rügen

Hard-boil the eggs. In the meantime, dice the herring, onions, and gherkins and mix. Add the sunflower oil, and finally, chop the hard-boiled eggs and add them. I prefer three eggs because the hard-boiled yolk gives the salad a nice creamy texture. I also add a little gherkin liquid. Do not add any seasoning. The herring from the packet is salty enough. If you let the salad stand for a day, it will infuse well. For some, however, it will be a bit too salty. This salad brings the island of Rügen and the feeling of vacation to our homes. It goes perfectly with traditional jacket potatoes.
