Ingredients for 20 servings:
- 3 herring fillets (double fillets)
- 1 small shallot(s)
- 2 tbsp chives, finely chopped
- 20 chives
- 20 lettuce leaves
- lemon juice
- salt and pepper

Cut 20 thin strips of herring into strips, then dice the rest into small cubes. Peel the shallot and dice very finely. Combine the herring with the diced shallot and finely chopped chives, season with lemon juice, salt, and pepper. Let it marinate thoroughly in the refrigerator. Briefly blanch the lettuce leaves in boiling salted water, then refresh in ice water. Repeat with the chives. Drain well and pat dry. Place 1 tablespoon of herring tartare on each lettuce leaf, form a parcel, and tie it with a chive, tying in the strips of herring.
