Mature the wrong fillet

Ingredients for 4 servings:

  • 1 ½ kg beef (false fillet), approx.
  • 100 ml honey
  • 1 kg salt

Instructions

Working time approx. 10 minutes; Rest period approx. 21 days; Total time approx. 21 days 10 minutes

Place the fake fillet in a bowl or metal container (GU container) and rub a thick layer of honey all over it. Now fill the bowl or container with salt so that the entire fillet is thickly covered in salt. A container that isn’t too big is best for this, so you don’t need as much salt. Now place the bowl in the refrigerator for three weeks to let the meat mature. After the maturing time, wash the fillet thoroughly and pat it dry. It can now be cut into small steaks and placed directly on the grill. Tip: If you don’t like it quite so salty, you can trim off some of the edges.
