Maultaschen with Melted Onions and Potato Salad

Ingredients
 

Maultaschen

  • 4 piece Maultaschen Swabian
  • Lard with greaves and apple
  • 6 piece Onions
  • Sugar brown - about a 1/4 tsp

potato salad

  • 4 piece Potatoes
  • Seasonal herbs
  • 6 piece Cherry tomatoes
  • Salt, pepper, vinegar, oil
  • Some vegetable stock, hot
  • 1 small half a red onion

Instructions
 

Preparing potato salad

  • Boil the potatoes and let them cool. Slice. The kl. Cut half a red onion into very small cubes and add to the chopped potatoes. Now add some warm broth and set aside.

Onions

  • Peel the onions and cut into thin strips. Melt the lard in a pan and brown the onions in it. Add a little sugar to caramelize.
  • Now quarter the dumplings and fry them in the lard for golden money. Season the potato salad with salt, pepper, vinegar, oil and the herbs and season accordingly. The kl. Halve the cherry tomatoes and add to the potatoes. Mix everything nicely.
  • Serve the Maultaschen with the potato salad and the melted onions and enjoy.
