Maultaschen with onion, tomato and cheese

Ingredients for 2 servings:

  • 360 g Maultasche(n), vegetarian
  • 170 g cherry tomatoes
  • 50 g Emmental cheese
  • 1 tsp vegetable stock powder
  • 1 onion(s)
  • 2 cloves garlic
  • ½ cup water, approx. 100 – 125 ml
  • 8 sprigs of oregano, fresh
  • 10 basil leaves, fresh
  • some salt and pepper
  • Caraway seeds
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Add olive oil to a pan and heat. Cut the Maultaschen into thin strips. Chop the onion and garlic and fry them with the Maultaschen until golden brown. Meanwhile, quarter the cherry tomatoes. Chop the fresh basil and oregano. Dissolve 1 teaspoon of vegetable stock in 1/2 cup of water and deglaze the Maultaschen with it once they are browned. Let the stock evaporate. Pour the cheese over the Maultaschen and cover the pan until it has melted. Add the tomatoes, salt, pepper, and a little caraway. Serve with a drizzle of balsamic dressing, if desired.
