Quinoa salad with grapes and cheese

Ingredients for 4 servings:

  • 250 g mountain cheese
  • 250g quinoa
  • n. B. broth
  • 1 stalk(s) leek
  • 1 bunch of parsley
  • 40 g lime juice (approx. 2 limes)
  • 60 g olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 350 g grapes, dark, seedless

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

tastes wonderful warm and cold

Grate the cheese and place it in a bowl. Halve the grapes and add them to the cheese. Finely slice the leek and sauté in a little olive oil. Cook the quinoa in the broth according to the package instructions. Add the hot quinoa and leek to the cheese and mix well. Mix the olive oil and lime juice well and pour over the salad. Season with parsley, salt, and pepper and mix well again. Delicious hot or cold.
