Ingredients for 3 servings:
- 2 cucumbers, peeled
- 1 large onion(s), finely diced
- 2 tomatoes, peeled, diced
- 300 g minced pork
- 100 g feta cheese
- 3 tsp oil, for frying
- 1 tsp dill, dried
- e.g. salt and pepper
- e.g. caraway, ground
- 1 tsp broth, granulated
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 45 minutes
without egg and mushrooms
Halve the cucumbers lengthwise and carefully scoop out the insides with a teaspoon. Place 3 halves in a suitable baking dish and cut the 4th half into small cubes. Heat 2 teaspoons of oil in a small saucepan and sauté the diced onions until translucent, then let cool. Heat 1 teaspoon of oil in a saucepan, add the diced cucumbers and fry lightly, add half of the translucent onions and deglaze with the tomatoes. Simmer while stirring until a light crust forms on the bottom of the pan. This should not get too dark. Immediately add the water, stir well and season with salt, a little pepper, 1/2 teaspoon dill tips and the granulated stock. Cover the pan and simmer on low heat for 10 minutes. Mix the minced meat with the remaining onions, salt, pepper, 1/2 teaspoon dill tips and ground caraway seeds and fill the 3 cucumber halves. Pour the hot sauce over the stuffed cucumbers. If you like, you can thicken the sauce a little more. Now place the casserole dish in an oven preheated to 180°C (fan oven) for 30 minutes. Remove the dish from the oven, top the cucumbers with the feta, and return it to the oven for another 15 minutes. Carefully place the cucumber halves on plates and serve with rice and sauce. The sauce and the minced meat should be well seasoned, as the cucumber absorbs a lot of the flavor.
