Mother's 'Julash soup'

Ingredients for 5 servings:

  • 1 kg beef goulash
  • 1 pack of soup vegetables
  • 2 onions
  • 2 small can/n mushrooms, sliced
  • 1 bell pepper(s), red
  • 1 bell pepper(s), green
  • 1 large can of tomatoes, peeled
  • e.g. beef broth, instant
  • salt and pepper
  • Paprika powder
  • oil
  • 500 ml water

Working time approx. 30 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 30 minutes

Goulash soup, easy to prepare

Finely chop the onions, soup vegetables, and bell peppers, then brown the meat, seasoning with salt, pepper, and paprika. Add the chopped vegetables and the previously drained mushrooms and sauté for about 15 minutes, stirring occasionally. Now take the peeled tomatoes in your hand and crush them into the pot. Add 2-3 tablespoons of beef broth, stir, and add about 500 ml of water. Cover and simmer on medium heat for 2-3 hours, until the goulash is tender. Toward the end of the cooking time, season to taste with pepper, salt, and beef broth. It tastes best the next day.
