Ingredients for 4 servings:
- 300 g spruce shoots, fresh light green, alternatively fir tips
- 600 g sugar, preferably cane sugar
Instructions

Spruce or fir tip syrup
Layer the light green May buds alternately with the sugar in a large preserving jar. The layer of May buds should be twice as high as the sugar layer. The last layer should be sugar. Let stand in a warm, sunny place for 2-3 weeks until a syrup has formed. Then strain through a cheesecloth and pour the syrup into dark jars. It has an expectorant effect as a cough syrup, but is also popular for culinary purposes.
