Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Lentils with rice and onions

By “cup” I mean a normal coffee cup! Wash the brown lentils and bring them to a boil with the water, then reduce the heat slightly and simmer for half an hour, or until the lentils have softened slightly. Add the cumin, salt, and rice to the lentils and simmer on low heat until the rice is tender, about 25-30 minutes. Meanwhile, fry the sliced onions in oil until golden brown. Remove the onions from the pan and pour the oil (used to fry the onions) over the lentil and rice dish and stir well. If there is too much oil, use only half. Finally, serve the mdardra with the onions on top, accompanied by a yogurt and garlic sauce or a salad.
