Meat: Pork Cheeks with Oyster Mushrooms

  • 400 g Pork cheeks
  • 50 g Bacon
  • 50 g Onion
  • 1 size Clove of garlic
  • 100 g Oyster mushrooms
  • 200 ml Broth
  • Oregano
  • Salt
  • Black pepper from the mill
  • Lard
  1. Fry the lightly smoked, diced bacon with the coarsely chopped onion and garlic in lard. Then remove.
  2. Season the cheeks with salt and pepper and fry them vigorously.
  3. Deglaze with broth. I always have my own knuckle of pork broth in stock. Add the bacon and onion mixture. Also the roughly cut oyster mushrooms. Scatter some oregano on top.
  4. Now on a low flame, braise in the closed roaster for about 1.5 hours.
