Ingredients for 4 servings:

  • 1 kg pork for goulash, diced
  • 500 g onion(s), small
  • 200 g celery
  • 200 g mushrooms, small fresh
  • salt and pepper
  • 2 sprigs of thyme
  • 2 garlic cloves
  • 500 ml beer (dark beer)
  • 1 pinch(s) of sugar or a dash of maple syrup
  • possibly sauce thickener

in dark beer sauce

Peel and halve small onions, trim and trim mushrooms, leaving them whole or halving them depending on their size. Brown the pork goulash in batches, remove, then sauté the onions, add the garlic and celery, add the meat, add the spices and half of the dark beer, and simmer over low heat. When the meat is tender, add the mushrooms and the rest of the dark beer to the meat, thicken with a little sauce thickener if desired, and simmer for another 10 minutes. Schupfnudeln (a kind of dumpling) are excellent with this dish.
