Ingredients for 2 servings:
- 250 g mashed potatoes, e.g. leftover from the day before
- 100 g grated cheese, any type you like
- 1 egg(s)
- some milk or cream
- 150 g meat sausage
- 300 g buttered vegetables, frozen or leftover vegetables
- 1 small onion(s)
- 1 garlic clove(s)
- salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Thaw frozen vegetables with diced onion and garlic in a covered pan over medium-high heat. Cook briefly. Cook fresh vegetables as desired. Season vegetables with salt and pepper to taste. Transfer the vegetables to a casserole dish. Slice the sausage. Brown the sausage slices on both sides in the same pan as the vegetables. Place the cooked sausage slices next to each other or in a shingle pattern on top of the vegetables. Mix the mashed potatoes (I had leftover mashed potatoes and celery) with the egg and grated cheese. Stir in a little milk or cream to make the mashed cheese mixture nice and smooth. Season with salt and pepper to taste. Spread the mashed potatoes over the sausage, ensuring everything is well coated. Bake the casserole at 200°C (top/bottom heat) for about 30 minutes, until nicely browned.
