- 1 stale roll
- 2 tsp salt
- 1 tsp pepper
- Breadcrumbs
- 4 small onions

- 250 ml meat broth
- 150 g blue cheese
- 150 g tomatoes, pureed
- salt and pepper
- 1 tbsp flour
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Soak the bread roll in water. Fry the chopped onions in a pan over low heat until they are slightly translucent and soft. This makes it easier to shape the meatballs into rounds later, and the onion pieces won’t stick out so much. Knead the minced meat, cooled onions, egg, and bread roll (squeeze out most of the water), along with salt and pepper, in a bowl. After 5-10 minutes, knead for 10 minutes, form small or large meatballs, roll in breadcrumbs, and fry in the pan. At the same time, prepare the sauce. Sauté the finely chopped onion in fat until translucent, dust with flour, deglaze with the meat broth, and simmer. Then add the cheese and simmer again. Add the passata, heat through, and season to taste. Serve the meatballs on plates and pour the sauce over them. Fries or croquettes are delicious.
