Ingredients for 1 servings:
- 500 g hazelnuts, ground
- 300 g powdered sugar
- 1 tsp, leveled cinnamon powder
- 1 tsp, vanilla (bourbon vanilla)
- 1 tsp spice mix (Delifrut) from the health food store, possibly more
- 2 egg whites
- 2 tbsp sweet liqueur (Amarula, Cointreau, 43 etc.)
- n. B. Chocolate coating of your choice
- e.g. hazelnuts or similar, ground
- some powdered sugar for the work surface and molds
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Mix the ground hazelnuts, powdered sugar, and spices. Then add the egg whites and liqueur and mix with a dough hook for about 3-5 minutes. Then knead everything again with your hands until you have a smooth dough and roll it out on a work surface dusted with powdered sugar to a thickness of about 1 cm. Now cut out cookies and place them on a baking sheet lined with baking paper. Dip the cookie cutters occasionally into the powdered sugar to ensure the dough is easy to release. Bake in a preheated oven at 150°C (fan oven) for about 10-15 minutes. Once the pillows have cooled, melt the chocolate coating. Briefly dip the tops of the pillows in the chocolate coating, let them drain briefly, then dip them in the ground hazelnuts and let them dry. This gives them a very nutty flavor, and the spice mixture gives them a somewhat rustic, Christmassy feel. This recipe can also be made with other ground nuts. Almonds are also delicious with just 2 teaspoons of vanilla or 2 teaspoons of cinnamon as a spice and a white chocolate coating decorated with almond flakes. You can also omit the decoration, as they are also a treat on their own! These cookies will be soft, not crispy.
