Meatballs with couscous

Ingredients for 4 servings:

  • 100 g couscous, instant
  • 75 ml tomato juice
  • 1 m.-large onion(s), red
  • 500 g minced meat
  • 2 m.-sized eggs
  • 1 sprig(s) of oregano
  • 1 pinch(s) of salt and pepper
  • Breadcrumbs, if needed

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Classics in a new way

Mix the couscous with the tomato juice and let it swell for a few minutes. Peel and finely chop the onion. Mix the minced meat with the eggs, couscous, and onion. Season with salt and pepper. Strip the oregano leaves and add them. If desired, thicken the dough with breadcrumbs. Preheat the oven to 220°C (top/bottom heat). Line a baking tray with baking paper. Knead the meat mixture thoroughly. With wet hands, form walnut-sized balls and place them on the tray. Bake in the oven at 200°C (convection oven) for about 10 minutes on the middle rack, turning once. Serve hot or cold, as desired. Approx. 455 kcal per serving.
