Summer salad with melon and cucumber

Ingredients for 4 servings:

  • 4 leaves of lettuce
  • 4 chard leaves
  • ¼ watermelon(s)
  • ½ cucumber(s)
  • 4 sprigs of peppermint
  • some lemon zest, grated
  • 1 tbsp germ oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and chop the lettuce and chard leaves, then place them in a salad bowl. Peel the cucumber and cut it into bite-sized pieces along with the watermelon. Pick and chop the peppermint leaves and add them to the salad along with a little lemon zest. For the dressing, combine the lemon juice and honey with the oil and season with salt and pepper to taste. Pour over the salad, stir, and let it marinate briefly.
