Meatballs with green beans

Ingredients for 2 servings:

  • 250 g minced meat, mixed
  • 250 g potatoes, floury
  • 1 roll
  • 150 g beans, green
  • 1 egg(s)
  • 1 onion(s)
  • 170 g butter
  • 1 tbsp clarified butter
  • 25 g flour
  • 50 g cream
  • 425 g milk
  • 2 tbsp mustard, medium hot
  • 2 sprigs savory
  • salt and pepper
  • nutmeg

Instructions

and mashed potatoes

Preheat the oven to 120 degrees Celsius (top/bottom heat). Peel the potatoes and boil them in salted water until tender. Heat 75 ml of milk in a saucepan until lukewarm and soak the bread roll in it. Peel and finely chop the onion. Separate the egg and finely chop the parsley. Remove the bread roll from the milk and squeeze out any excess water. Knead the minced meat with the onion, 1 tablespoon of mustard, parsley, egg yolk, and bread roll, and season with salt and pepper. Form the meatballs from the dough. Heat the clarified butter in a pan and fry the meatballs over medium heat. Keep the finished meatballs warm in the oven. Add 20 g of butter to the frying fat and sauté the flour in it. Deglaze this roux with 250 ml of milk and simmer for 10 minutes. Add 1 teaspoon of mustard and season the sauce with salt and pepper. Cook the beans and savory in salted water for 10 minutes until tender. Drain and then refresh with ice water. Toss in a pan with 25g of butter and season with salt and pepper. Drain the potatoes and let them steam. Rice them through a potato ricer and mix them in a saucepan with the remaining milk and butter. Season the mashed potatoes with nutmeg, salt, and pepper. Whip the cream until stiff and fold into the mashed potatoes. Serve the meatballs on plates with the green beans, mashed potatoes, and sauce.
