hearty, quick and easy
Remove the strudel dough from the refrigerator. Boil water with a little salt for the potatoes. Peel the potatoes and cut them into small cubes. Add them to the boiling water and let them cook until tender. They shouldn’t be too soft. Finely dice the onion and smoked meat. Drain the sauerkraut. Drain the cooked potatoes. Sauté the onion in a pan with a little oil over high heat. When they begin to brown, add the potatoes and fry. After about 2-3 minutes, add the smoked meat with the spices and the crushed garlic clove. Fry for a few minutes. Remove the pan from the heat and stir in the sauerkraut. Preheat the oven to about 200°C. Roll out the strudel dough and spread the sauerkraut mixture on top. Roll it up into a strudel and bake on the middle rack for about 25 minutes. This goes well with hot or medium-hot mustard and a green salad as a side dish.
