Meatloaf in puff pastry

Ingredients for 6 servings:

  • 4 onions
  • 5 tomatoes
  • 100 g gherkins
  • 350 g minced beef
  • 1 egg(s)
  • 1 egg white
  • 1 roll
  • Salt
  • pepper
  • 1 tsp sweet paprika powder
  • 4 eggs (for filling)
  • 1 pack of puff pastry (frozen)
  • 1 egg yolk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and dice the onions. Blanch the tomatoes in boiling water, peel and deseed them, and dice them. Peel and dice the cucumber. Hard-boil the eggs for the filling. Knead the minced meat with the egg and egg white, onions, tomatoes, cucumbers, soaked bread roll, and seasonings. Form the meat mixture into an oval loaf. Spread it out slightly, place the peeled, hard-boiled eggs next to each other on top. Moisten your hands with cold water and fold the dough over the eggs. Roll out the thawed puff pastry to about 3mm thick and wrap the meat loaf in it. Decorate with some cut-out puff pastry. Brush the surface with egg yolk. Bake in a preheated oven at 200°C for 60-80 minutes.
