Minced meat muffins with mashed potatoes

Ingredients for 1 servings:

  • 600 g minced beef
  • 2 eggs
  • 3 slices of toast
  • 100 ml milk
  • Paprika powder
  • salt and pepper
  • nutmeg
  • 1 onion(s), finely chopped
  • 1 garlic clove(s), finely chopped
  • 700 g potatoes, floury
  • 2 egg yolks
  • 20 g butter
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

for 12 muffins

For the mashed potatoes, peel, chop, and boil them. Then mash them very finely and stir the egg yolk and butter into the potato mixture. Season with salt, pepper, and nutmeg. For the muffins, dice the slices of bread and soak them in milk. Then mix with the minced meat, chopped onion, and garlic, along with the eggs, and season with the specified spices. Spread the muffin mixture into a greased 12-hole muffin tin (or muffin cups) and bake for 10 minutes in a preheated oven at 200°C (convection oven). Remove from the oven and spread the mashed potatoes on the muffins. It’s best to use a piping bag to ensure this is done evenly. Finally, bake for a further 20 minutes.
