Ingredients for 2 servings:
- 2 slices of meatloaf
- 1 tbsp butter for frying the meatloaf and fried eggs
- 2 eggs
- 100 g mountain cheese
- 2 shallots
- n. B. Olive oil for frying the peppers
- 3 bell peppers, red
- 3 spring onions
- 1 tsp sea salt
- 1 tsp pepper (spiced pepper)
- 1 tsp sauce (Chakalaka)
- 1 dash of Worcestershire sauce
- 100 ml cream
- 2 tbsp bacon, lean, diced
- n. B. Clarified butter
- 2 tbsp onion(s), diced
- salt and pepper
- Worcestershire sauce

For the onion and bacon mixture, heat lean bacon cubes with clarified butter in a pan, brown the onion cubes, and season with salt, pepper, and Worcestershire sauce. Instead of Worcestershire sauce, you can use balsamic vinegar. The filling should be creamy. Everyone should experiment with the seasoning until they find their favorite combination. Brown the meatloaf in butter over medium heat. In another pan, fry the fried eggs in butter over medium heat. Cut the mountain cheese into small cubes. Turn the meatloaf over, place the cheese on top, and cover the pan with a lid. Once the cheese has melted, spread the onion and bacon mixture. Top with the fried egg once the egg white is crispy around the edges. Meanwhile, brown the shallots in oil over medium heat, then add the diced bell peppers. After about five minutes, add the thinly sliced spring onions. Season with sea salt, peppercorns, chakalaka, and Worcestershire sauce, and finally drizzle with cream. Allow to reduce slightly. Arrange on plates and serve.
