Ingredients for 2 servings:

  • 1 large celeriac, approx. 800 g
  • 200 g meat sausage with garlic
  • 3 eggs, size L
  • Salt
  • Paprika powder, hot
  • Oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Peel the celeriac and cut into 2 cm cubes. Heat the oil in a pan and fry the cubes until crispy, but don’t season yet so they don’t absorb water. Don’t use a lid. Dice the sausage as well, but cut into slightly larger pieces than the celery. Crack the eggs, season with salt, and whisk. Add the sausage just before the final toss of the celery to prevent it from burning. Once everything is crispy, season with salt and paprika. Reduce the heat and pour the eggs over the sausage, stirring occasionally. A tomato salad goes perfectly with this dish. This dish even pleasantly surprised a celery hater. It’s definitely worth a try. 10 carbs and about 650 kcal per serving. A very filling and flavorful meal.
