Meatloaf with feta cheese and dried tomatoes

Ingredients for 4 servings:

  • 750 g minced beef
  • 200 g feta cheese, diced or crumbled
  • 10 tomatoes, dried, marinated in oil, drained and diced
  • 2 m.-sized eggs
  • 5 tbsp breadcrumbs
  • 6 tbsp water
  • 2 cloves garlic, pressed
  • salt and pepper
  • n. B. herbs, e.g. rosemary, thyme, Provençal

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

cold or warm, also for buffets

Combine all ingredients to form a meatball dough, mixing in the feta cheese last so it doesn’t crumble too much. Be careful with the salt, as the feta cheese and tomatoes add a good flavor. Transfer to a greased dish and bake in a preheated oven at 200°C (top/bottom heat) for about 45-50 minutes. Serve hot or cold. The tomatoes and cheese will cause the roast to shrink slightly as it cools.
