Meatloaf with rice and feta cheese

Ingredients for 6 servings:

  • 1 kg minced meat, mixed
  • 1 cup long grain rice or basmati
  • 1 egg(s)
  • 1 onion(s)
  • 200 g feta cheese
  • 1 cup sour cream, optional
  • sage
  • salt and pepper
  • Paprika powder
  • ½ liter broth
  • 1 tbsp oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Rice replaces breadcrumbs or stale rolls, gluten-free

Preheat the oven to 220°C. Cook the rice and let it cool slightly. Mix the minced meat with the egg and rice thoroughly. Season with pepper, salt, paprika, and sage. Finally, carefully mix in the feta cheese, cut into small cubes. Transfer the mixture to a greased roasting pan and form into a loaf. Peel the onion, chop it roughly, and arrange it around the roast. Roast for about 90 minutes, basting with the broth halfway through cooking. If you like, you can thicken the sauce with sour cream after removing it from the oven. This goes very well with potato salad and fresh salad.
