Meatloaf with Roasted Peppers

Ingredients
 

  • 500 g Mixed minced meat
  • 1 stale Bun
  • 1 Egg
  • 250 g Roasted peppers from the glass
  • 2 Garlic cloves
  • 1 Chilli pepper
  • Black pepper from the mill
  • Salt
  • Oil
  • 200 ml Vegetable stock

Instructions
 

  • Crumble the bun and place in a bowl, add the mixed minced meat. Now add the egg and season with salt and pepper. Core and finely chop the chilli pepper and add it as well. Finely chop the garlic and add it. Roughly cut the roasted peppers and add them.
  • Now knead everything very well by hand to form a homogeneous dough. The roasted paprika is further chopped up and distributed well in the minced meat and since the roasted paprika brings a lot of moisture with it, it is not necessary to soak the roll.
  • Oil an ovenproof dish and shape a roast out of the minced meat, place in it and pour the vegetable stock over it. Bake the meatloaf in the middle of the oven at 180 degrees for 45 - 50 minutes. If you like, you can then make a sauce from the meat stock, we had the meatloaf with a potato salad.
