Side Dishes: Roasted Peppers with Red Onions and Bacon

The perfect side dishes: roasted peppers with red onions and bacon recipe with a picture and simple step-by-step instructions.

For seasoning:

  • 5 Discs Breakfast bacon
  • 3 middle Red onions
  • 1 size Red peppers
  • 1 tsp Dried oregano
  • 1 tsp Dried marjoram
  • Salt
  • Ground pepper white
  • 0,25 tsp Ground caraway
  • 1 tsp Sweet paprika

To fry:

  • 8 tbsp Vegetable oil (a little more or less depending on the size of the pans)

To garnish:

  • 2 Spring onions
  1. Peel the potatoes, rinse thoroughly, drain well and dice. Cut the breakfast bacon into small pieces. Peel the onions, clean and wash the peppers, cut everything into medium-sized cubes.
  2. Heat about 6 tablespoons of oil in a large pan. Add the potato cubes and fry over medium heat. Important: Do not turn the potatoes too often, this way they won’t get really brown and crispy, but mushy. It takes some time and patience, but it’s worth it.
  3. * Heat the remaining oil in a second pan. Fry the bacon, onions and peppers in it for about 5 minutes, then remove from the heat. Clean and wash the spring onions, then cut into thin rings.
  4. When the potatoes are lightly browned (after about 15-20 minutes), add the onion and bacon mixture to the pan. Fry everything for about 8-10 minutes. Season with salt, white pepper, caraway seeds and paprika and season to taste. Finally stir in the dried herbs. Arrange the roasted potatoes, garnish with the spring onion rings and serve.
  5. Goes with many things as a side dish, we had the potatoes as a side dish with fish and bean salad. I also like to eat the potatoes as a main course with a quark dip and salad. Link to the recipe for the bean salad in preparation step 7. Bon appetit and have fun cooking :-).
  6. * Note: I fried the potatoes and the onion and bacon mixture in two pans first because they both have different cooking times. This will prevent the onions from turning black and bitter and the bacon from burning. Of course, you can also fry the potatoes first and add onions, bacon and peppers later when the potatoes are lightly browned. Everyone can do this as they want.
