Medallions with tomatoes and cheese

Ingredients for 2 servings:

  • 300 g medallions (pork or veal)
  • 50 g blue cheese, cut into pieces
  • 1 tomato(s), very finely diced
  • Oil, for frying
  • salt and pepper
  • 1 pinch(s) sweet paprika powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Flatten the medallions (fillet pieces) with your hand, season with salt and pepper. Sear them in hot oil in a pan, turning after two minutes, and fry for another two minutes. Place the medallions in a small, ovenproof dish, top with diced tomatoes and pieces of blue cheese, and sprinkle with a little paprika. Bake the dish on the middle rack at 200°C for about 5-7 minutes and serve with your choice of side dishes.
