Mediterranean beef fillet

Ingredients for 2 servings:

  • 400 g beef fillet(s)
  • 4 tomatoes
  • 1 onion(s), red
  • 200 g oyster mushrooms
  • 2 garlic cloves
  • 1 tbsp cream cheese
  • 2 tbsp Gouda, grated
  • ½ bunch basil
  • ½ bunch parsley
  • salt and pepper
  • oregano
  • olive oil

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Preheat the oven to 150°C (top/bottom heat) and place an empty baking dish inside. Deseed the tomatoes and chop them into small pieces. Peel and crush the garlic cloves, then stir in. Season with salt, pepper, and oregano. Stir in the cream cheese and chopped herbs. Clean the oyster mushrooms, season with pepper, and salt, and fry them in heated olive oil. Add a little garlic powder, if desired. Then remove from the oven and keep warm. Cut the beef fillet into approximately 2 cm thick slices, season with pepper, and fry briefly on both sides on high heat (no more than 1 minute per side). Peel the onion, slice it into rings, and fry briefly. Remove the fillet from the pan and place it in the warmed baking dish. Arrange the fried oyster mushrooms around it. Spread the tomato mixture over the fillet pieces, sprinkle with Gouda cheese, and place in the oven for 20 minutes. Serve hot. Per serving: approximately 635 kcal
