Ingredients for 2 servings:
- 250 g ciabatta from the previous day
- 200 ml olive oil
- 2 garlic cloves
- 3 tbsp balsamic vinegar
- 500 g tomatoes
- 70 g olives, black
- 70 g capers
- 3 bell peppers, red, yellow and green
- 3 tbsp fresh basil
- salt and pepper
Instructions

Panzanella
Cut the bread into bite-sized pieces. Peel and press the garlic, mix it with oil, vinegar, salt, and pepper, and toss it in the bread. Slice the bell peppers and dice the tomatoes, then add both to the bread along with the olives and capers. Finally, add the basil and season the salad with salt and pepper.
