Mediterranean Chicken and Mozzarella Casserole

Ingredients for 4 servings:

  • 250 g rigatoni or pasta of your choice
  • 400 g chicken strips
  • 500 ml cooking cream
  • 200 g processed cheese
  • 200 g mozzarella, grated
  • 1 handful of cherry tomatoes
  • 4 cloves garlic
  • a few stalks of basil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Finely dice the garlic or press it through a garlic press and finely chop 2/3 of the basil. Halve the cherry tomatoes. Sauté the garlic and the shredded chicken in a pan for 5 minutes and season with salt and pepper. Remove the meat, add the cooking cream and bring to a boil briefly. Then add the cream cheese and the chopped basil, simmer briefly and season with salt and pepper. In the meantime, grease the baking dish and spread the rigatoni evenly on the bottom. Then pour the sauce over it so that all the pasta is completely covered. Next, sprinkle about half of the mozzarella over it, then spread the meat evenly on top and sprinkle with the remaining mozzarella. Arrange the cherry tomatoes on top and bake the casserole at 200°C fan-assisted oven (220°C top/bottom heat) for about 25 minutes, until the crust is golden brown. Finally, scatter the remaining basil over the casserole and serve.
