Mediterranean chicken pan

Ingredients for 2 servings:

  • 500 g chicken breast
  • 400 g potatoes
  • 2 tomatoes
  • 1 bell pepper(s), red
  • ½ pack of cream cheese spread
  • 1 cup of sour cream, approx. 200 g
  • pepper
  • Cayenne pepper
  • Rub, of your choice
  • herbal salt
  • 1 rosemary sprig(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Rinse the chicken breast and cut into small pieces. Shake well with the rub in a sealable bowl. Dice the potatoes, tomatoes, and bell peppers. Briefly brown the meat in a roasting pan. Once the meat is browned all over, add the potatoes and braise with the lid on for about 10 minutes. Then add the tomatoes, bell peppers, and rosemary and simmer for another 10 minutes. Add the processed cheese, sour cream, and seasonings, mix everything well, and simmer uncovered for another 10 minutes. Serve with a nice red wine.
