Mediterranean couscous with cod

Ingredients for 4 servings:

  • 200 g couscous
  • 600 g cod fillet(s)
  • 1 tbsp lemon juice
  • herbal salt
  • Lemon pepper
  • 1 tbsp flour
  • 1 bell pepper(s)
  • 1 zucchini
  • 2 small onions
  • 1 garlic clove(s)
  • 4 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

First, wash the cod fillet, pat dry, and cut into pieces. Sprinkle with lemon juice, then season with salt, pepper, and flour. Prepare the couscous according to the package instructions. Wash the bell peppers, halve them, and remove the white seeds and membranes. Wash and trim the zucchini as well. Cut both into small cubes. Peel the onions and garlic and dice them, or crush the garlic. Briefly fry everything together in 2 tablespoons of oil in a hot pan and continue frying for about 5 minutes, turning the vegetables frequently. Fry the cod meat in the remaining oil. Finally, mix the couscous with the vegetables and season to taste with herbs, salt, and pepper. Arrange everything on a flat plate and serve with the cod.
